Main Character is Main Charactering. It means that the Protagonist of a story is showing behavior, promise, talent, potential, etc. befitting that of their rightfull role as main character. This expression is usually said or depicted when stories start with a main character who lacks the quality and traits of a main character. Example: A MC that lacks power, magic, talent, OP skills, Cheat skills, influence, fame, a HAREM, and anything that a person watching anime would said that such qualities belong to a main character in the beginning of a story/adventure. Stories with weak, forgettable MCs that are akin to background characters that gradually or suddenly become stronger and when those who belittled them or now acknowledge or befriend them know the TRUE potential of the MC. This is when "The MC is MCing". And this trope will commonly be found in Shonen / Isekai / Romance animes greatly but are not excluded to them. Most Isekai protagonists are examples of "MC is MCing" Another prominent example is: Midoriya Izuku from Boku no Hero Academia! "MC is MCing" is the equivalent of saying "Plot Armor" & "Because Plot" or "Deus Ex Machina
