Tlaxcala Mexico - located in east-central Mexico, in the altiplano region, with the eastern portion dominated by the Sierra Madre Oriental. It is bordered by the mexican states of Puebla to the north, east and south, México State( Located in South-Central Mexico) to the west and Hidalgo to the northwest. Molotes -- small cornmeal-& -cheese-based "biscuits" with a variety of stuffings, such as pig brains, macerated meat, potatoes with pork sausage, squash flowers, or corn-smut fungus (blue)
