A shot of the cheap version of liquor, the "house" liquor. Given when a patron asks just for a shot of tequila/vodka/rum/etc without expecting a certain label. When a certain label name is requested, it is referred to as a call shot. Same applies to drinks. "Rum and coke" vs. "Bacardi and coke."
