Using paper-towels to take off the grease of your food. Most notably used on the top of cheese pizza. Not to be confused with dabbing... someone degreasing will press down hard enough on the top of a pizza slice with a paper towel to make the sauce and ingredients spill out the side, where dabbers will just gently dab off the grease sitting on the very top of the cheese.
