The act of removing any fried qualities of an object or person. This is not the act of reversing frying the process as that would involve time travel. To defry is much like electrolysis. Simply replace the hydrogen in electrolysis with the fried particles in a fried entity in the act of defrying and you have, almost, the same thing. Defrying does not involve electrolysis in any way. In fact, a defry session has never actually been successfully executed, it is merely all scientific theory.
