Maple peas (sometimes yellow split peas). Key ingredient in hearty, traditional dish from the Black Country (large industrial region in central England). The dried pulses, bacon, water, seasoning, onion (optional), cooked slowly and served with faggots. Popular street food and in pubs, especially with football goers. Pronounced "gray pays" due to the strong and recognisable accent of the region.
