Colima Mexico - state & city same name, Colima. is a tiny state of western Mexico on the central Pacific coast, includes the 4 oceanic Revillagigedo Islands. Mainland Colima shares borders with the states of Jalisco & Michoacán. In addition to the capital city of Colima, the main cities are Manzanillo & Tecomán. Colima's main crops are 🍋, melons, 🥭, papaya, 🍉, yellow seedless 🍉 & 🍌. Other crops include 🌽, sugar cane, jalapeno chilies, 🍒 🍅& 🥒. Popular food here is Sopitos - Small fried tortillas with shredded meat & local cheese. Tamales de Chihuilin - 🌽 tamales are steamed in 🍌 leaves, The flavour is unique as pork lard is used along with local chihuilines fish from the river Chicharron en Salsa - Deep fried pork skin served in a red or green sauce. Fish Ceviche - ground fish that is marinated in lime juice & then drained producing a dry-style ceviche. It’s often with red snapper but it can be made with any local fish. Chilayo - pork & vegetable stew served with rice & pickled 🧅. Pozole Seco - dry white pozole, which has practically no broth topped with 🥓, 🥬, 🧅 , radish. Menudo - cow guts (tripe) soup Chamorro- Slow cooked pork leg served in a spicy sauce. Atole - A drink made with 🌽 with a bit of vanilla & cinnamon. Tejuino - fermented 🌽, molasses, cinnamon, 🧂& lime over crushed ice Tuba - alcoholic drink uses sap from 🥥 palm trees are fermented then topped with toasted 🥜. Tuxca - An alcoholic drink that ferments sap from local agave plants.
